The Curved Paring Knife

The K Sabatier Curved Paring Knife - known in French as the Bec d'Oiseau, or bird's beak - is the specialist blade for peeling and preparing round produce. The curved blade follows the contour of potatoes, pears, apples, and stone fruit naturally, reducing waste and giving you far more control than a straight blade on a curved surface. Light, compact, and razor-sharp, it's the knife that earns its place in the hand rather than on the board. Carbon steel takes a finer edge than stainless and holds it longer through repeated use - forged from a single mass of steel in Thiers, France, by skilled workers using techniques unchanged for generations.

Care & Maintenance

  • Hand wash only - never dishwasher
  • Wipe dry immediately after use - carbon steel will rust if left wet
  • Apply a light coat of food-safe oil occasionally to protect the blade
  • Sharpen with a whetstone or professional sharpening service when needed
  • A natural patina will develop with use - this is normal and protects the steel
  • Store on a magnetic strip or in a knife block to protect the edge
