The K Sabatier Chef Knife 200mm in Carbon Steel with Olive Wood Handle is forged in Thiers, France from a single mass of carbon steel - the classic chef's knife length, fitted with a natural olive wood handle for a knife that is as beautiful on the bench as it is authoritative on the board.

Why Carbon Steel? Why Olive Wood?

Carbon steel takes a sharper edge than stainless and holds it longer under hard use - the reason professional French kitchens have relied on it for centuries. The wide, rigid 200mm blade handles slicing thick cuts of meat, breaking down vegetables, and chopping and mincing herbs with equal authority. The natural olive wood handle is hand-set on the full tang with stainless steel rivets - each one unique in grain and colour, warm in the hand, and more beautiful with age. A knife that earns its place on the bench and improves with every use.

Care & Maintenance

  • Hand wash only - never dishwasher
  • Wipe dry immediately after use - carbon steel will rust if left wet
  • Apply a light coat of food-safe oil occasionally to protect the blade
  • Keep the olive wood handle dry - do not soak or leave damp
  • Feed the olive wood handle occasionally with a food-safe wood oil to keep it conditioned
  • A natural patina will develop on the blade with use - this is normal and protects the steel
  • Store on a magnetic strip or in a knife block to protect the edge
