Experience 190 Years of French Knife-Making in a Single Blade

The K Sabatier Chef's Knife 200mm is forged in Thiers, France - the knife-making capital of the world - from a single mass of carbon steel, by hand, using techniques unchanged since 1834. This is the knife that professional French chefs have reached for across generations.

The Specs

  • Steel: Carbon steel, forged in a single mass - 54-56 HRC
  • Blade length: 200mm (8 in.)
  • Handle: Black POM, hand-set on the tang with three brass rivets
  • Construction: 100% forged - tempered, ground, and polished crosswise
  • Origin: Handcrafted in Thiers, France

Why Carbon Steel?

Carbon steel takes a sharper edge than stainless and holds it longer under hard use - the reason professional kitchens have relied on it for centuries. The K Sabatier chef's knife is forged from a single mass of carbon steel, then tempered, ground, and polished crosswise to produce exceptional cutting power, hardness, and balance. The wide, rigid blade handles slicing thick cuts of meat, breaking down vegetables, and chopping and mincing herbs with equal authority. The black POM handle is hand-set on the full tang with three brass rivets for a secure, balanced grip that improves with use.

Care & Maintenance

  • Hand wash only - never dishwasher
  • Wipe dry immediately after use - carbon steel will rust if left wet
  • Apply a light coat of food-safe oil occasionally to protect the blade
  • Sharpen with a whetstone or professional sharpening service when needed
  • A natural patina will develop with use - this is normal and protects the steel
  • Store on a magnetic strip or in a knife block to protect the edge
