The K Sabatier Difference

The Au Carbone Olive Wood line pairs high carbon steel with a handle material as characterful as the blade itself: olive wood, with its distinctive grain and natural warmth, secured to the tang with three stainless rivets. High carbon steel takes a finer, keener edge than stainless and responds exceptionally well to sharpening - the more you use and maintain it, the better it performs. Care & Maintenance

  • Hand wash only, never dishwasher
  • Dry immediately after every use - carbon steel will rust if left wet
  • Apply a light coat of food-safe oil if storing for extended periods
  • Expect a natural patina to develop over time - this is normal and protective
  • Do not soak or leave the olive wood handle wet
  • Occasionally treat the olive wood handle with a food-safe wood oil to keep it conditioned
  • Sharpen with a whetstone - carbon steel responds exceptionally well to sharpening
