The K Sabatier Chef Knife 200mm is the workhorse of the Au Carbone Olive Wood line - a full-length chef's knife forged from a single piece of high carbon steel, fitted with a warm olive wood handle. French craftsmanship, natural materials, and a blade that gets sharper with every whetstone session.

The K Sabatier Difference

The Au Carbone Olive Wood line pairs high carbon steel with a handle material as characterful as the blade itself: olive wood, with its distinctive grain and natural warmth, secured to the tang with three stainless rivets. High carbon steel takes a finer, keener edge than stainless and responds exceptionally well to sharpening - the more you use and maintain it, the better it performs. At 200mm, this is the most versatile length in the range - long enough to handle large vegetables and proteins, short enough to remain agile and precise.
Care & Maintenance
- Hand wash only, never dishwasher
- Dry immediately after every use - carbon steel will rust if left wet
- Apply a light coat of food-safe oil if storing for extended periods
- Expect a natural patina to develop over time - this is normal and protective
- Do not soak or leave the olive wood handle wet
- Occasionally treat the olive wood handle with a food-safe wood oil to keep it conditioned
- Sharpen with a whetstone - carbon steel responds exceptionally well to sharpening
