The K Sabatier Authentique Flexible Fillet Knife 150mm is forged in Thiers, France from high carbon steel - a short, flexible blade purpose-built for filleting smaller fish, removing pin bones, and navigating the tight spaces around ribs and skin where a rigid blade simply can't follow.

Flex Where It Matters
The flexible blade is the fillet knife's defining feature - it bends to follow the contour of the spine and ribs, keeping the edge in constant contact with the bone for maximum yield and minimum waste. At 150mm, this is the blade for smaller fish - trout, bream, snapper - where a longer blade would be unwieldy and imprecise. High carbon steel holds a finer, longer-lasting edge than stainless, keeping every cut clean and controlled. The black POM handle is hand-set on the full tang with three brass rivets for a secure grip through wet, slippery conditions.
Care & Maintenance
- Hand wash only - never dishwasher
- Wipe dry immediately after use - high carbon steel will rust if left wet
- Rinse immediately after contact with fish and salt
- Apply a light coat of food-safe oil occasionally to protect the blade
- Sharpen with a whetstone or professional sharpening service when needed
- A natural patina will develop with use - this is normal and protects the steel
- Store on a magnetic strip or in a knife block to protect the edge
