190 Years of Mastery. One Commemorative Line.
The 1834 Limited Edition celebrates the year K Sabatier was founded in Thiers - the knife-making capital of the world. Each knife in this line is finished to the highest standard the Authentique range produces, making it both a serious kitchen tool and a collectible piece of French culinary heritage. The slicing knife's long, narrow profile minimises surface contact with the meat, reducing friction and delivering thinner, more even slices than a chef's knife ever could - no sawing, no tearing, no lost juices. High carbon steel holds a finer, longer-lasting edge than stainless. The black POM handle is hand-set on the full tang with three brass rivets.
Care & Maintenance
- Hand wash only - never dishwasher
- Wipe dry immediately after use - high carbon steel will rust if left wet
- Apply a light coat of food-safe oil occasionally to protect the blade
- Sharpen with a whetstone or professional sharpening service when needed
- A natural patina will develop with use - this is normal and protects the steel
- Store on a magnetic strip or in a knife block to protect the edge
