190 Years of Mastery. One Commemorative Line.

The 1834 Limited Edition celebrates the year K Sabatier was founded in Thiers - the knife-making capital of the world. Each knife in this line is finished to the highest standard the Authentique range produces, making it both a serious kitchen tool and a collectible piece of French culinary heritage. The 150mm blade is the agile option - precise, quick, and perfectly suited to the detail work and smaller cutting tasks where a full-length chef's knife is too much. High carbon steel holds a finer, longer-lasting edge than stainless. The black POM handle is hand-set on the full tang with three brass rivets.

Care & Maintenance

  • Hand wash only - never dishwasher
  • Wipe dry immediately after use - high carbon steel will rust if left wet
  • Apply a light coat of food-safe oil occasionally to protect the blade
  • Sharpen with a whetstone or professional sharpening service when needed
  • A natural patina will develop with use - this is normal and protects the steel
  • Store on a magnetic strip or in a knife block to protect the edge
