Each knife in this line is finished to the highest standard the Authentique range produces, making it both a serious kitchen tool and a collectible piece of French culinary heritage. The boning knife's short, stiff blade navigates around joints, follows the contour of bones, and separates meat from carcass with precision and minimal waste - whether you're breaking down a whole chicken, trimming a rack of lamb, or removing a pork loin from the bone. High carbon steel holds a finer, longer-lasting edge than stainless. The black POM handle is hand-set on the full tang with three brass rivets.

Care & Maintenance
