A Deba at 16cm and a Nakiri at 17cm - two very different knives with two very different purposes, both in carbon steel at 58 HRC, both made in Japan. The Deba is a specialist fish knife; the Nakiri is a flat-profile vegetable knife. Fit them with your own handles and you have a pair of genuinely unique Japanese kitchen knives.

Care and Maintenance
- Fit handles before use - bare tangs are sharp and unsafe without a handle
- Hand wash only - never dishwasher
- Dry immediately after washing to prevent rust
- Apply a light coat of camellia or food-safe mineral oil to the blade
- Sharpen on a whetstone once handles are fitted
