For the Maker - Japanese Steel, Your Handle
Vintage Japanese carbon steel blanks are increasingly hard to find. These knives were forged in Japan and have never been fitted with handles - making them a perfect project for a knife maker, woodworker, or anyone who wants a truly custom Japanese kitchen knife. Carbon steel at 58 HRC takes a razor-keen edge and rewards careful sharpening. The Deba is a specialist fish knife; the Namiri is a versatile all-purpose blade. Fit them with your own handles and you have a pair of genuinely unique Japanese knives.
Care and Maintenance
- Fit handles before use - bare tangs are sharp and unsafe without a handle
- Hand wash only - never dishwasher
- Dry immediately after washing to prevent rust
- Apply a light coat of camellia or food-safe mineral oil to the blade
- Sharpen on a whetstone once handles are fitted
