Three Blades. One Kitchen.
The Deba is the Japanese fish and poultry knife - thick-spined for breaking down whole fish and jointing poultry with precision. The Petty is the Japanese utility knife - nimble and precise for peeling, trimming, and all the detail work a larger blade can't reach. The Nakiri is the dedicated vegetable knife - flat-edged and double-bevelled for clean, push-cut chopping through any vegetable without the rocking motion. Carbon steel sharpens to a finer, keener edge than stainless and develops a natural patina with use. All three share the same octagonal handle profile for a consistent grip across the set. One-of-a-kind and not available anywhere else.
Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing to prevent rust
- Apply a light coat of food-safe mineral oil to the blade if storing long-term
- Sharpen with a whetstone - carbon steel responds exceptionally well to sharpening
- A natural patina will develop with use - this is normal and desirable
