Henckels - Two Centuries of Solingen Steel

J. A. Henckels has been forging knives in Solingen since 1731 - one of the oldest and most respected names in professional cutlery. The Twinworks line represents the working end of that heritage: fully forged, full tang, built to last a lifetime of daily use. At 210mm, this chef's knife is the classic professional length - versatile enough for large prep work and precise enough for detail cuts. The carbon steel blade sharpens to a finer, keener edge than stainless and develops a natural patina with use. One-of-a-kind and not available anywhere else.

Care & Maintenance

  • Hand wash only - never dishwasher
  • Dry immediately after washing to prevent rust
  • Apply a light coat of food-safe mineral oil to the blade if storing long-term
  • Hone regularly with a honing steel; sharpen with a whetstone as needed
  • A natural patina will develop with use - this is normal and desirable
