The Iseya Santoku
Iseya knives are handmade by Yoshinori Seto using molybdenum stainless steel - a hand-hammered blade construction that ensures strength and integrity throughout the blade. Molybdenum stainless steel is a practical, high-performing alloy prized for its superior edge retention, sharpness, and stain resistance - an excellent choice for cooks who want Japanese blade performance with minimal maintenance.
