The Hinokuni Shirogami #1 Nakiri Knife 210mm is hand-forged in Kumamoto Prefecture by Hinokuni-san, a young blacksmith who recently established his own forge after apprenticing under the renowned Nishida-san. Forged from Shirogami #1 - one of the purest carbon steels available - this nakiri takes an exceptionally fine edge and is a joy to sharpen. The kurouchi finish and cherry oval handle give it a distinctly traditional Japanese character.

Why This Knife Works
Shirogami #1 is a very pure carbon steel - almost identical to Aogami #1 except without chromium or tungsten. That purity means it forms an exceptionally fine grain structure at the edge, allowing it to reach a level of sharpness that stainless steels simply cannot match. The nakiri profile - flat edge, squared tip, tall blade - is designed for the push-cut technique used in Japanese vegetable prep. At 210mm it covers most cutting board tasks efficiently. The kurouchi finish on the cladding adds a layer of protection and gives the knife its raw, hand-forged character. Reactive steel - wipe dry after every use.
Care and Maintenance
- Hand wash only - never dishwasher
- Wipe dry immediately after every use - reactive carbon steel will rust if left wet
- A natural patina will develop with use - this is normal and protective
- Sharpen on Japanese water stones - takes an exceptional edge with minimal effort
- Apply a light coat of camellia oil if storing for extended periods
- Store on a magnetic strip or in a saya sheath to protect the edge
