Every HG Blade knife is hand-forged by Hayden Gregory in his one-man workshop, with a focus on real-world kitchen performance. The Nakiri is the Japanese-style vegetable knife - a flat-edged, rectangular blade designed for push-cutting and chopping with precision. This 175mm example is built from 1084 high carbon steel, forged by hand and bearing the hammer marks of its maker. The Kurouchi finish - the blacksmith's black forge scale - is left intact, giving the blade a rustic character while providing natural rust resistance. The Tasmanian Oak handle with Red Gum and Pine spacers is uniquely Australian, hard-wearing, and comfortable in the hand. No two knives are ever the same.
Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing
- Hone regularly with a honing steel or ceramic rod
- Sharpen on a whetstone (1000/3000 grit recommended)
- Apply a light coat of camellia oil if storing long-term
- Store on a magnetic strip or in a knife block
