The HG Blade Difference
Every HG Blade knife is hand-forged by Hayden Gregory, bearing the hammer marks of its maker - a guarantee that no two knives are identical. The Nakiri is Japan's dedicated vegetable knife, and this Australian interpretation brings that flat-edged precision to a hand-forged 1084 carbon steel blade. The kurouchi finish preserves the blacksmith's black scale from the forging process, giving the blade its distinctive dark patina while helping protect the carbon steel from rust and further oxidation. The thick 3.5mm spine tapers to a fine tip, and the 50/50 V-bevel grind makes sharpening straightforward on any whetstone. The Tasmanian Oak handle, with its Red Gum and Pine spacers, is hard-wearing and distinctly Australian.
