The HG Blade KUROUCHI-OAK Gyuto 210mm is 100% Australian made - hand-forged by Hayden Gregory in his one-man workshop from 1084 high carbon steel, finished in kurouchi, and fitted with a Tasmanian Oak handle. No two knives are ever the same.

The HG Blade Difference
Every HG Blade knife is hand-forged by Hayden Gregory, bearing the hammer marks of its maker - a guarantee that no two knives are identical. The kurouchi finish preserves the blacksmith's black scale from the forging process, giving the blade its distinctive dark patina while helping protect the carbon steel from rust and further oxidation. The thick spine tapers to a fine tip for a blade that is robust enough for daily kitchen work yet precise enough for detail cuts. The 50/50 V-bevel grind makes sharpening straightforward on any whetstone. The Tasmanian Oak handle, with its Red Gum and Pine spacers, is hard-wearing and distinctly Australian - a material that improves with age and use.
Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing
- Apply a light coat of food-safe oil to the carbon steel blade to prevent rust
- Hone regularly; sharpen on a whetstone when needed
- Store on a magnetic rack or in a knife roll
