The Bunka
The Bunka is a Japanese-inspired multi-purpose knife with a distinctive reverse tanto tip - precise enough for detail work, versatile enough for everyday prep. Hayden Gregory forges each blade by hand, leaving the hammer marks visible under the Kurouchi finish. That dark, rustic scale is not just aesthetic - it helps protect the carbon steel from oxidation and develops a natural patina with use. The thick spine tapers to a fine edge, and the 50/50 grind makes sharpening straightforward for any skill level. Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing - 1084 carbon steel will rust if left wet
- Apply a light coat of food-safe mineral oil occasionally to protect the blade
- A natural patina will develop with use - this is normal and protects the steel
- Hone regularly with a smooth honing rod to maintain the edge
- Sharpen with a whetstone when needed - the 50/50 grind makes this straightforward
- Store on a magnetic strip or in a knife block to protect the edge
