The Gustav Emil Ern Boning Knife
Gustav Emil Ern was one of the last companies to resist mass production after World War 2, continuing to employ highly skilled craftsmen to hand-make their knives in Solingen - Germany's legendary knife-making city. This compact 120mm boning knife is a precision tool - the narrow blade is designed to navigate around bone and joint with minimal waste, making it ideal for poultry, fish, and fine butchery work. At just 88g, it is light enough for extended use without fatigue. Carbon steel sharpens to a finer edge than stainless and develops a natural patina with use. A rare collector's piece with genuine Solingen provenance.
Care & Maintenance
- Remove remaining rust with a fine abrasive and food-safe oil before use
- Handle replacement recommended - consult a knife maker
- Hand wash only - never dishwasher
- Dry immediately after washing - carbon steel is reactive
- Apply a light coat of camellia or food-safe mineral oil after each use
- Sharpen on a whetstone - carbon steel responds exceptionally well
