The Flexible Fillet Knife

Friedr. Herder Abr. Sohn is one of Solingen's oldest surviving cutlery houses, with roots stretching back to 1727. This 210mm flexible fillet knife is a precision tool - the long, thin, flexible blade is designed to glide along the contours of fish and meat, delivering clean, waste-free cuts. At just 100g, it is light enough for extended use without fatigue. Carbon steel sharpens to a finer edge than stainless and develops a natural patina with use. One-of-a-kind and not available anywhere else.

Care & Maintenance

  • Hand wash only - never dishwasher
  • Dry immediately after washing to prevent rust
  • Apply a light coat of food-safe mineral oil to the blade if storing long-term
  • Sharpen with a whetstone - carbon steel responds exceptionally well
  • A natural patina will develop with use - this is normal and desirable
