The Boning Knife
Friedr. Herder Abr. Sohn is one of Solingen's oldest surviving cutlery houses, with roots stretching back to 1727. This compact 150mm boning knife is a precision tool - the narrow blade is designed to navigate around bone and joint with minimal waste, making it ideal for poultry, fish, and fine butchery work. At just 88g, it is light enough for extended use without fatigue. Carbon steel sharpens to a finer edge than stainless and develops a natural patina with use. One-of-a-kind and not available anywhere else.
Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing to prevent rust
- Apply a light coat of food-safe mineral oil to the blade if storing long-term
- Sharpen with a whetstone - carbon steel responds exceptionally well
- A natural patina will develop with use - this is normal and desirable
