Echizen Craftsmanship
Echizen is one of Japan's oldest knife-making regions, with a tradition stretching back over 700 years. Ikeda-san forges each blade by hand using Aogami Super - the highest-performing steel in the Aogami (Blue Paper) family, with added tungsten and chromium for superior edge retention and wear resistance compared to Aogami #1 and #2. The santoku's versatile profile handles slicing, dicing, and chopping across proteins, vegetables, and herbs with equal confidence. The kurouchi finish on the cladding gives the blade a raw, honest character, while the tsuchime hammered texture reduces drag. The stainless steel cladding protects the reactive carbon core while keeping maintenance manageable.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after use - carbon steel core will rust if left wet
- Apply a light coat of camellia oil if storing for extended periods
- Expect a natural patina to develop with use - this is normal and protective
- Sharpen with a whetstone to maintain the edge
- Store on a magnetic strip or in a knife block
