Echizen Craftsmanship
Echizen is one of Japan's oldest knife-making regions, with a tradition stretching back over 700 years. Ikeda-san forges each blade by hand using Aogami #2 - a high-carbon blue paper steel prized for its ability to take an exceptionally fine edge and hold it through demanding use. The tsuchime hammered finish reduces drag and gives each blade a distinctive, hand-worked appearance. The stainless steel cladding protects the reactive carbon core while keeping maintenance manageable. Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after use - carbon steel core will rust if left wet
- Apply a light coat of camellia oil if storing for extended periods

- Sharpen with a whetstone to maintain the edge
- Store on a magnetic strip or in a knife block
