Crafted in Tosa, Japan by Tsunehisa, the G3 Nashiji Sujihiki 270mm is a slicing knife built for precision. G3 steel - also known as Ginsan, Silver 3, or Ginsanko - is a fine-grained high-carbon stainless steel by Hitachi Metals that delivers the sharpness and ease of sharpening of carbon steel with the low-maintenance of stainless. The nashiji (pear skin) finish reduces drag, and the magnolia oval wa handle keeps the balance light and nimble in hand.
