Experience Tsunehisa G3 Nashiji Precision - Sujihiki 270mm

Crafted in Tosa, Japan by Tsunehisa, the G3 Nashiji Sujihiki 270mm is a slicing knife built for precision. G3 steel - also known as Ginsan, Silver 3, or Ginsanko - is a fine-grained high-carbon stainless steel by Hitachi Metals that delivers the sharpness and ease of sharpening of carbon steel with the low-maintenance of stainless. The nashiji (pear skin) finish reduces drag, and the magnolia oval wa handle keeps the balance light and nimble in hand.

Why the G3 Nashiji Sujihiki?

The sujihiki is the Japanese answer to a carving knife - long, slender, and built for single-stroke slicing through proteins, fish, and roasts with minimal resistance. Tsunehisa's G3 steel is a standout choice for this style: it holds a razor edge, sharpens easily on a whetstone, and resists corrosion far better than traditional carbon steel. The nashiji finish breaks surface tension as the blade passes through food, while the lightweight magnolia wa handle reduces fatigue during extended prep. A serious slicer at an exceptional price point.

Care and Maintenance

  • Hand wash only - never dishwasher
  • Dry immediately after washing
  • Hone regularly on a honing steel or leather strop
  • Sharpen on a whetstone - G3 steel responds beautifully and is easy to maintain
  • Store on a magnetic strip or in a knife roll - avoid loose drawers
