The petty knife is the Japanese equivalent of the Western paring knife - used in hand for peeling, coring, trimming, and all the fine detail work that a larger blade can't reach. At 80mm, this is the most compact option - precise, quick, and perfectly suited to the detail work where control matters more than reach. G3 Ginsan steel is made by Hitachi Metals - a stainless steel with the fine grain structure, edge formation, and sharpening feel of classic white carbon steel. The oval magnolia Wa handle sits naturally in a pinch grip for complete control. Made in Tosa, Japan by Tsunehisa.
Care & Maintenance
- Hand wash and dry - dishwasher not recommended
- Keep the magnolia handle dry - do not soak
- Sharpen on Japanese water stones - sharpens easily like carbon steel
- Store on a magnetic strip or in a knife block to protect the edge
