The K Sabatier Authentique Ham Knife 30cm is forged in Thiers, France from high carbon steel - a long, flexible slicing blade purpose-built for carving whole hams, legs of lamb, and large roasts into thin, even slices with a single, fluid stroke.

The Art of the Carve

The ham knife's long, narrow blade is designed for one thing above all else - the long, single pull-stroke that produces paper-thin slices of cured meat, roast leg, or whole poultry with perfectly clean cuts and no tearing. At 300mm, it covers the full length of a whole ham in a single stroke, while the slight flex in the blade lets it follow the contour of the bone for maximum yield. High carbon steel holds a finer, longer-lasting edge than stainless, keeping every slice clean and precise. The black POM handle is hand-set on the full tang with three brass rivets for a secure, balanced grip at the carving board.

Care & Maintenance

  • Hand wash only - never dishwasher
  • Wipe dry immediately after use - high carbon steel will rust if left wet
  • Apply a light coat of food-safe oil occasionally to protect the blade
  • Sharpen with a whetstone or professional sharpening service when needed
  • A natural patina will develop with use - this is normal and protects the steel
  • Store on a magnetic strip or in a knife block to protect the edge
