Where Ancient Craft Meets Modern Steel
In traditional Japanese kitchens, only the head chef was permitted to use the Kiritsuke - a mark of skill and seniority. Its long, flat blade excels at the push-cutting and pull-cutting techniques of Japanese cuisine, while the distinctive angled tip allows for the precision work of a much smaller knife. Each Shun Premier Kiritsuke takes at least 100 handcrafted steps to complete. The VG-MAX steel core is clad in layers of Damascus stainless steel - and near the edge, where the steels meet, an undulating line forms that echoes the hamon of a traditionally tempered samurai sword. The hammered tsuchime finish creates a series of hollow-ground cavities that reduce drag and help food release cleanly. The contoured walnut-coloured PakkaWood® handle nestles comfortably in the hand, while the embossed end cap adds balance and a premium finish.
Care & Maintenance
- Hand wash only, never dishwasher
- Dry immediately after washing
- Hone regularly with a Shun honing steel to maintain the 16° edge
- Sharpen with a whetstone or professional sharpening service when needed
- Store on a magnetic strip or in a knife block to protect the blade
