The K Sabatier Authentique Salmon Slicing Knife 300mm is forged in Thiers, France from high carbon steel - a long, narrow blade with hollow-ground air pockets along the flat that prevent smoked salmon and delicate fish from sticking, delivering paper-thin slices with a single, clean pull-stroke.

The hollow-ground air pockets along the blade flat break the suction between the steel and the fish, allowing paper-thin slices of smoked salmon to release cleanly from the blade without tearing or folding. At 300mm, the blade covers the full length of a whole side of salmon in a single pull-stroke - no repositioning, no sawing, no wasted product. High carbon steel holds a finer, longer-lasting edge than stainless, keeping every slice precise and clean. The black POM handle is hand-set on the full tang with three brass rivets for a secure, balanced grip.

Care & Maintenance

  • Hand wash only - never dishwasher
  • Wipe dry immediately after use - high carbon steel will rust if left wet
  • Rinse immediately after contact with fish and salt
  • Apply a light coat of food-safe oil occasionally to protect the blade
  • Sharpen with a whetstone or professional sharpening service when needed
  • A natural patina will develop with use - this is normal and protects the steel
  • Store on a magnetic strip or in a knife block to protect the edge
