Tsunehisa VG10 33 Layers,Australian Dyed stabilised horse chestnut Wood handle,
Our Premium vintage collection, brought to you by the partnership between Chef & a Knife, Iron Clad Knives and GT Edgeworks.
If you take cooking seriously, if you're ready to invest a little bit of time and a lot more care then this premium vintage carbon steel knife is for you.
This Suni knife is made with VG10 core steel, heat-treated to 60 HRC, with a smooth flat grind and fairly thin thickness behind the edge. These knives are handmade in Echizen Japan. The VG-10 core steel is forged between two layers of softer steel, this outer layer is patterned steel so that a very beautiful damask pattern can be seen. This Suminagashi technique is unique for Japanese knives and is a demonstration of the special forging techniques from Japan. The outer layer ensures that the core steel is well protected against possible damage and oxidation. The outer layer is also equipped with a beautiful hammer blow (Tsuchime) pattern so that products stick to the blade less quickly.
The handles are made from Australian Stabilised dyed poplar. This specific piece of timber has a rare grain type (the lines show the stages and age of the tree). They are attached to the full tang blade with a set of beautiful and solid brass pins. The timber was finished in natural Australian made timber finishes produced in Port Lincoln in South Australia by Constantia Organic finishes.
The new handle has been fitted and lovingly shaped by Josh from GT Edgeworks in South Australia. Josh has a passion for reviving vintage knives so you can be assured that the work is of the highest quality.
