At 58-60 HRC it is a practical, easy-to-maintain steel that holds a working edge through daily prep and sharpens readily on Japanese water stones. The sujihiki is the Japanese slicing knife - a long, narrow blade with minimal height designed to glide through proteins in long, single-stroke cuts with minimal drag. At 240mm it is the shorter sujihiki option, ideal for portioning fish fillets, slicing roasts, and carving poultry. The thin 1.3mm spine and low blade height minimise resistance through the cut.
